Taho Lado (Rolled Tahu)

Last week, I have got a recipe from my new friend. It is tahu lado. It is the first time I have heard about that name. Looking at its name, I thought it seems like coming from padang or other part of sumatra. Is that right, I am not so sure. It is ok, it is not a big deal. The most important is It would be delicious and I could make different recipe for cassava leaves. Yeah, I got free that recipe as well as cassava leaves. Hehehehe. It is nice.

Well, the start with the ingredient:

  • Pepper, garlic, grind it
  • Add tofu/tahu egg, salt, powder and a little water. Grind and mix them well together. Set aside
  • Boil cassava leaves to tender. Cut to small
  • Take all ingriends and roll in banana leave. Steamed it
  • If you need to eat it, you could cut and fry it
  • And it is ready to eat.

You could save rest of steamed tofu into freezer, and take then fry anytime you want.

That’s the recipe, I haven’t try, but I believe that it would be delicious. You could try first.

Meat Soup

Here, in my hometown, there are two similar recipe related to meat. That are meat soup and meat soto. Yes, that are quite similar, same main ingridient, meat, and they contain much broth and stock. And all the difference between them is on the spices. Of course it would make their taste of two are different. Today i am going to show you how to make a meat soup.

Ingridients:

It is divided in two type: grounded spices and spices putting in the broth without groud.

  1. Grind these spices: shallots, garlic, pepper, ginger, nutmeg and capulaga.
  2. Put a spoon of oil in wok pan and heat it, put in grounded spices and Saute it untill getting its fragrant
  3. Boil meat and water in pan until the meat tender.
  4. Take meat of and cut into dice
  5. Put it back in pan
  6. Add sauted spices
  7. Add salt, sugar and flavor
  8. Add cinnamum, bunga lawang (illicium verum), clove and flavor (Royco)
  9. Taste it
  10. It is ready to be served

Soto

Soto is my favorite menu. Today i want to make soto again. There are so many type of soto in indonesia. You must be have heard it. Yes, that’s right. we have soto kudus, soto bandung, soto lamongan, soto banjar, coto makasar etc. Almost every regency have different type of soto.

And what soto did i make? I dont know what it is. I just make it by combine java and borneo soto. I make pasta like java but cook it in borneo way. I serve it as borneo’s mum do.

Ingredients: Chicken, lemongrass, kaffir lime leaves, ginger, kencur (Kaempferia galanga), cumin (jinten), kembang lawang (star anise), cengkeh (cloves), corriander, black pepper, candle nuts, tomatoes, celery, spring onion, shallots, garlic, salt, sugar, oil, broth.

for garnish: celery, spring onion, tomatoes, mung bean sprout, fried shallots, citrus (limau), kecap (soy sauce), bihun (rice noodle), fried potatoes. Chop all in small size

Method:

  1. Place the chicken in a saucepan. Add water in it and cook it.
  2. Grind corriander, black pepper, garlic, shallots, kaempferia galanga, candle nut, salt and sugar using mortar and pestle coarsely
  3. Saute that paste in other saucepan with oil and pour it in the first saucepan.
  4. Add lemongrass, tomatoes, kaffir limes, ginger, cumin, star anise, cloves.
  5. Take out the chicken and put it in a plate, then shreddd the chicken and put aside
  6. When broth in a saucepan have been boiled, turn of the stove

Serving:

  1. Take some rice in a bowl. Add some cabbage, mungbean sprout, celery, spring onion, fried shallots
  2. Add the broth in a bowl
  3. If you like, you may add some tomatoes, citrus, soy sauce, rice noodle or fried potatoes
  4. I is ready to eat.

Sambal Ganja.

Ganja in english means marijuana. Yes, marijuana is banned in my country. Even, marijuana is haram for muslem.

But, this is not about that. It is not drug. It is not relate to ganja. Although its name ganja, but no ganja is in this recipe. People say sambal ganja because when someone eat it, she/he will want again and again. It is recipe is from aceh, the western of Indonesia.

Well, this is it

  1. Boil some prawn, peal it and set aside
  2. Grind in raw: chillies, shallot, lemongrass, kaffir lime, salt, sugar, averrhoa bilimbi (belimbing wuluh)
  3. Add pealled praw in it, grind roughly.
  4. That’s it.

Smoked whiptale stingray sambal (sambal ikan pari)

Whiptale stingray is special dishes for me, because i got difficult to find it in my hometown, kediri. It makes sense because my hometown is far from beach. Today i found smoked whiptale stingray in traditionale market, kumai market. Seeing it, of course i immediatly bought it. Although i dont know how to cook, i already imagined it how delicious it is.

Well, i will make it to be sambal. Yes, smoked whiptale stingray sambal. It would be delicious. When i finish, i will share its picture here.

This is its recipe.

  1. First of all, fry smoked whiptale stingray.
  2. grind all this ingrdient in raw: chillies, shallots, salt, sugar, flavour, jeruk sambal
  3. Add fried shrimp paste. Grind all of them and
  4. Add smoke whiptale stingray, grind in rough.
  5. That’s it, it is ready to serve with spinach soup.

Sambal bawang

So many sambal are ussually eaten beside Indonesian meals. As you know, indonesian love spicy food. So, you are going to eat spicy food and you want to make it soon and fast. So, sambal bawang is the solution.

That’s right, sambal bawang is one of many kind indonesian sambals besides sambal tomat, sambal terasi, sambal terong, sambal ganja and so on.

So, what are ingredients and how to make it. It is:

Ingredient: chillies, onions, vegetable oil, salt, sugar, penyedap (flavoring).

To make sambal, you just need to grind all ingridient (except vegetable oil) untill smooth paste. Then, add 1 spoon vegetable on ( better hot oil) it.

That’s it. It is ready to eat with your meal

Potatoes Fritters

Today i would like to make a notation what i got when i live with my sister in law. it is wonderfull life there, i learned many recipe there. the one i must i love is i know how to make potatoes fritters and several base recipes. Actually i dont know how to cook, i am not a chef and i do not like to cook. and cooking is not my hobby. But i must make my husband happy. why i worry if i can’t what will he do? i don’t know but i must anticipate. hehehe… No no no i m kidding you. he will not do that i believe in him. I just do what i love i love to serve my love one. That is all.

well, today i would like to show you how to make fritter. The base ingredient, of course, is potatoes and i am not going to boil but fry it. It is the recipe.

Ingredient: potatoes, oil, pepper,  shallot, garlic, salt

leek and celery (optional)

Method:

  1. peel all potatoes and cut nicely
  2. grind pepper, shallot and garlic
  3. add salt adequately
  4. fry all potatoes
  5. grind all hot potatoes in bumbu
  6. add some oil in that dough
  7. add cutting leek and celery
  8. make dough in a small ball
  9. in frying pan, heat oil for frying
  10. take some dough and fry in pan until fragrant
  11. put fritter in a plate and serve
  12. hmmm yummy

we usually enjoy this fritter with soto. But if you like you can just eat it anytime.

Ote-ote (Indonesian Fritter)

Morning brothers and sisters. I hope you all are fine. hmmm, It has been a long time no write. Well, Today i would like to tell you how to make ote-ote. For you coming from east java, this word is already familiar to you, isnt it? For east Javanese ote ote can be mean anyone whose upper body is no cloth at all. When the weather is so hot, people would love to get out their cloth.

well, i m here not for talking about ote-ote in that meaning. i would like to tell you about food. Because ote-ote is also name of a dish ( in other place ote-ote is similar with bakwan) frying, gorengan. People may take it whenever they want, in the morning, afternoon or even in the evening. the shape is unique, it is convex ( it may inappropriately word for food, i don’t know how to describe it in English correctly) and it would be more delicious when you eat it combine with chili. But if don’t like spicy, you can take tomatoes sauces or a litlle sambal (chili sauce).

Well, let me tell you how to make it

Ingredients:

  • wheat flour
  • vegetable ( cabbages, bean sprouts, carrots, 2 stalks spring onion or leek etc.) chopped nicely
  • 1 egg

Seasoning :

  • 5 grains of pepper
  • 3 cloves of shallot
  • 2 cloves garlic
  • 1 cm ginger
  • 1 table spoon salt
  • water
  • oil for deep frying

Method:

  1. grind pepper, shallot, garlic, ginger and salt ( you may use blender to make it easier)
  2. put it in a bowl and combine with chopped vegetables, wheat flour and water
  3. stir it nicely
  4. add an egg and mix it well
  5. take a ladle and oil, put them in a frying pan
  6. Heat oil
  7. take  one ladle of the dough and put it into the hot oil.
  8. when  the dough in the oil release from the ladle, you may take again one ladle of dough and put it again in hot oil.
  9. fry until golden brown
  10. repeat until the dough is finished
  11. serve in a small plate combine with chilies

care of healthy

Recently I met many people who are sick. Starting by news of my late friend who was dead by diabetes, it is remind me about how most of my family who suffer the same disease, diabetes. They are my late uncle, late aunts, late cousin and my father. Alhamdulillah my father is still alive. But sometime it make me worry about his disease. Moreover he don’t control his meal, he eat whatever he want. He always said that finally he will die. O my father, you make your daughters worry so much.

In the last ramadhan, we was socked of the death of my friend, I am pretty closed to him and his family. He was my neighbor in my ex house. Last week I met him, even he visit me. We also made conversation in phone. He is still in my head, he seem like still alive. Right, it is really make me socked. And two days ago I visit husband of my old friend. He was in ICU (intensive Care Unit) for almost 3 weeks. Whew, three weeks in ICU, I can’t imagine how he passes his days. He lives with oxygen aid. Moreover, the sister of janitor wife is also in the same hospital for cancer. oh no, it make me feel sad. Why I met so many people who is ill. I know it is the ways of death and it haves to because it is life. Some are born, some death. But the ways of death remind me how I should live. I know my life is not healthy. I almost have never go exercise. Most of my time is before the computer and when I teach I often sit on the chair. Right, it is bad.

Well, I promise I will control my meal and I will go exercise at least jogging. Could i? I must. Then the most important is I must care about my ibadah. Because after this life we will life in akhirah. Ya Allah, guide me in the straightway, it is your way.

Rawon ( Meat Black Soup)

Rawon or soto rawon is one of delicious Indonesian foods. We could call as meat black soup because the color of it is black. Black color is caused by kluwak (black nut) as the main spicy whick gives strong nutty flavor. We eat it combined with rice. Hmmmm it is yummy… it make me hungry.

Well, let you know how to make soto rawon

Ingredients: Meat Lime leaves Lemongrass Ginger Galangal Salam leaves

Grounded ingridient (pasta): Shallot Garlic Candlenut Turmeric Kluwak (black nut) Coriander Pepper

Metode :

  1. Clean the meat and cut into dice.
  2. Heat water in pan until boiled
  3. Put the meat until tender in boiled water
  4. Ground shallot, garlic, candle nut, kluwak, coriander and pepper all together
  5. Sauté spice pasta until fragrant
  6. Put spice pasta in the pan
  7. Put lime leaves, lemon grass, ginger, galangal, and salam leaves in the pan
  8. Add some salt, sugar
  9. Turn off the fire..

For serving:

  1. Put some rice in a place,
  2. spread some bean sprout onyou can add some beansprout in a plate
  3. take some meat and brouth and pour on the plate
  4. Eat with sambal. It make this food more delicious.
  5. Have a nice meal.
